Prepare the Filling
Peel, core, and dice the Granny Smith apples. In a saucepan over medium-low heat, cook the apples with butter, brown sugar, cinnamon, and a pinch of salt. Stir occasionally until apples are soft and caramelized (about 10-15 minutes). Set aside to cool
Assemble the Pastries
Place a spoonful of the apple filling in the center of each pastry shape. Brush the edges with beaten egg, fold the pastry over the filling to form a turnover, and press the edges to seal. Use a fork to crimp the edges
